Seafood Tonkotsu Tsukemen / Kokura Castle and our seafood tonkotsu tsukemen

A 7-minute walk from Kokura Station. Enjoy seafood tonkotsu tsukemen served piping hot in a clay pot, creamy chicken ramen, and full-flavored mixed noodles and brothless ramen.

What makes our tsukemen special

  • Flat, high-hydration noodles

Flat noodles made with extra water for a smooth, chewy bite — they pick up plenty of the rich dipping soup.

  • Double broth

Pork and whole chicken are simmered slowly, then combined with the umami of dried sardines, mackerel flakes and bonito flakes.

  • Hot to the last bite

The dipping soup comes in a clay pot, so it stays hot until you finish.

How to Enjoy Each Dish

This is the same guide you’ll find at your seat. Choose a dish:

Seafood Tonkotsu Tsukemen

  1. Snap your photo within 20 seconds — it’s best eaten hot!
  2. First, try a few noodles on their own to enjoy their natural flavor.
  3. Dip the noodles into the piping-hot soup in the clay pot and enjoy the rich flavor.
  4. Change up the flavor with the kelp vinegar or black pepper on the table.
  5. We recommend adding rice or Oi-meshi (a small serving of rice) to the leftover soup to make zosui, a Japanese rice porridge.
  6. When you finish the noodles, ask for “soup-wari”: we add hot broth to thin the remaining soup so you can drink it to the last drop.

※For soup-wari, just ask a staff member.

Creamy Chicken Ramen

  1. Snap your photo within 20 seconds — it’s best eaten hot!
  2. First, take a sip of the soup with the spoon and enjoy its rich, creamy depth.
  3. Slurp the medium-thin noodles, made with Japanese wheat, and enjoy their aroma.
  4. Change up the flavor with the kelp vinegar, black pepper or chili pepper on the table.
  5. To finish, add rice or Oi-meshi to the leftover soup and enjoy it as zosui (rice porridge).

Egg-Topped Noodles (TKM)

  1. Take a nice photo first.
  2. Mix the “Mangetsu” egg in the center into the noodles vigorously, from the bottom up.
  3. Once well mixed, grab a big chopstickful and slurp it all in one go.
  4. Change up the flavor with lemon, kelp vinegar or black pepper.
  5. To finish, add rice or Oi-meshi to the leftover sauce for a bowl of egg rice.

Mixed Noodles

  1. Take a nice photo — shooting from directly above works best.
  2. Mix well from the bottom until the egg yolk coats everything — using the spoon makes it easier.
  3. Once well mixed, dig in!
  4. Add a little kelp vinegar from the table for a milder flavor (but not too much).
  5. To finish, add rice or Oi-meshi to the leftover sauce.

Brothless Ramen

  1. Take a nice photo — shooting from directly above works best.
  2. Add chili oil and vinegar to taste and mix well — we recommend about two swirls of each while the noodles are still hot.
  3. Once well mixed, dig in!
  4. To finish, add rice or Oi-meshi to the leftover sauce.

Rice and Oi-meshi can be ordered from your seat (cash only) — just ask a staff member.
